Recipe: Homemade Banana Peanut Butter Oatmeal


Currently my go-to breakfast is a homemade bowl of warming oatmeal! Personally, I find that it warms my body as well as leaves me feeling full and satisfied for hours afterwards.


The one thing I really enjoy about homemade oatmeal is that you can create different toppings every time to "change it up" as well as even cook things into the oatmeal such as apples. Howeverrrrrr, my fave right now is with banana and peanut butter. Recipe: Homemade Banana Peanut Butter Oatmeal (GF + V)

Serves: 2 Prep Time: 1 minute

Cook Time: ~10 minutes

Total Time: 11 minutes


Ingredients:

+ 1 cup gluten free oats

+ 1 ripe banana, split

+ 2 tbsp organic peanut butter, split (or sub other nut butter of choice such as almond, cashew, pumpkin, etc.)

+ 1tsp. chia seeds, split

+ Dash of cinnamon

+ 1 cup almond milk, split

+ Optional: brown sugar or maple syrup


Method:

  1. Bring 2 cups of water to a boil.

  2. Once the water is boiling, add the oats, stir and turn down to low to simmer for approximately 10 minutes, stirring occasionally.

  3. Once the oats are cooked through, split evenly.

  4. Cut up the banana and place over the oats while adding the peanut butter, chia seeds, cinnamon, sweetener of choice and any toppings you have.

  5. Pour almond milk or any other plant based milk over the oats and toppings.

  6. Enjoy!
