Recipe: Green Detox Soup



This soup is sooooo easy to make and is JAM packed with nutrients.


As we are entering in these colder months on the west coast of Canada I find that I am so much more into warming foods and soups are a great way to get so much nutrition into your diet while warming up your soul.


So, let me give you the recipe so you can make this soup for yourself.


Recipe: Green Detox Soup

Serves: 6

Prep: 10 minutes

Cook: 20-30 minutes

Total Time: 40 minutes


Ingredients:


+ 1 small onion, diced

+ 1/2 head medium green cabbage, chopped

+ 1 medium head of broccoli, chopped

+ 2 carrots, chopped

+ 1 huuuuge handful of raw spinach

+ 2 large garlic cloves, diced

+ 1 small piece of ginger root (~1/2 inch)

+ 1/2 box veggie broth

+ Filtered water

+ Spices: 1 tsp. turmeric, pink salt & black pepper to taste

+ Home-made cashew cream: - 1 cup raw cashews - 1 - 1 1/2 cup filtered water - pinch of pink salt


Method:


  1. In a large pot over low-medium heat add a drizzle of avocado oil or coconut oil and sauté the diced onion stirring occasionally until translucent (~5 minutes).

  2. While the onion is sautéing begin to chop up the cabbage, broccoli, carrots, garlic, and ginger.

  3. Once the onions are translucent begin to add the 1/2 box (~2 cups veggie broth) to the pot and equal amounts filtered water, then add the chopped up veggies (including the garlic and ginger) and spices - stir to combine.

  4. Bring to a boil and then turn down to a simmer for 20-30 minutes or until veggies are tender.

  5. While the veggies are simmering begin to make the cashew cream by adding the cashews, water, and salt to a blender and blend on medium for 1 minute or until fully combined. Pour the cream in a bowl or cup and set aside.

  6. Once the veggies are tender add the mix to a high speed blender and add the raw spinach. Blend for minimum 1 minute or until fully combined and add back to the pot on low heat until desired temperature.

  7. Add the cashew cream and any other additional spices to taste.

  8. Serve and enjoy!

**Store in a Tupperware container in the fridge for up to 2 days or in the freezer for up to a week.
