Recipe: Raspberry Overnight Oats

Okay, to be honest my lover goes to a coffee shop during the week and gets his matcha latte. Recently the coffee shop has been making overnight oats and he’s been getting them, loving them, and constantly telling me about them. So, now I had to make some that he could bring every morning to work while he’s loving them. And that I did!
I shared to my Instagram stories (if you’re not following me on Instagram yet, click here and press the follow button 💙) on Sunday night that I made some overnight oats and if they were good I would share the recipe. Well, this is how it went down:

Recipe: Raspberry Overnight Oats
Prep Time: 10 minutes
Wait Time: 15 minutes
Total Time: 25 minutes
Ingredients:
1/3 cup organic raspberries, mashed
3/4 tbsp chia seeds (for oats)
1/3 cup almond milk (or milk of choice)
1/3 cup rolled oats (I used gluten free from One Degree)
1/2 tsp cinnamon
2 tbsp maple syrup, divided
2 tsp chia seeds (for raspberry jam)
1/2 coconut yogurt, divided
Pinch of sea salt
Toppings: shaved almonds and hemp seeds
Method:
In a glass Tupperware or mason jar make the raspberry chia jam by rinshing and mashing the raspberries, add the chia seeds and 1 tbsp maple syrup (use more or less as you’d like) and mix to combine. Set aside in the fridge.
In a glass Tupperware or mason jar, make the oat portion by adding the milk, chia seeds, 1 tbsp maple syrup (more or less as you like), cinnamon, and sea salt and mix to combine, then add the oats and mix again. Set aside in the fridge and wait at least 15 minutes*.
Take out the raspberry chia jam and oat mixture from the fridge and in another glass Tupperware or mason jar add half the raspberry chia jam to the bottom with 1/4 cup coconut yogurt. Top with the oat mixture and then 1/4 cup coconut yogurt and the remainder of the raspberry chia jam.
Top with shaved almond and hemp seeds to your liking. Enjoy right then and there or leave in your fridge overnight for a quick grab-n-go breakfast or snack.
