Recipe: Oatmeal Chocolate Chip Cookies

If you’re craving a sweet delicious cookie, these are them! Filled with gluten free organic sprouted rolled oats, chia seeds, and of course chocolate chips, these will be sure to hit you in your feels. Is that even the right saying? Anywho…


I always hit “jump to the recipe” when I’m trying someone else’s version of recipes, so maybe I should look to add those to my recipes so you don’t have to read and/or scroll a long way to get to the goods. But if you are reading this, hello! Thanks for being here. Okay, now here is the recipe 👇🏼.


Ingedients:

  • 1 cup gluten free organic sprouted rolled oats, and more for later on

  • 1 cup gluten free organic sprouted oat flour*

  • 6 tbsp organic coconut oil, melted

  • 1/4 cup organic dark brown sugar

  • 1/4 cup organic pure maple syrup

  • 2 organic chia seed eggs**

  • 1/2 tsp organic baking powder

  • 1/2 tsp aluminum-free baking soda

  • 1 tsp organic ground cinnamon

  • 1/4 tsp sea salt

  • Add-in ingredients:

    - 1/3 cup dairy-free chocolate chips

    - 1/2 cup gluten free organic sprouted rolled oats


*make your own by blending the oats in a high speed blender while periodically scraping down the sides. Do this until it’s a fine powder without chunks.

**2 chia seed eggs: mix 2 tbsp organic chia seeds with 6 tbsp water.


Method:

  1. Preheat oven to 350 Fahrenheit and line a baking sheet with non-bleached parchment paper and set aside for later.

  2. Make chia eggs and set aside.

  3. In a medium sized bowl mix together the rolled oats, oat flour, cinnamons, baking powder, baking soda, and salt. Set aside.

  4. In a large sized bowl mix together the melted coconut oil, dark brown sugar, maple syrup, and chia eggs thoroughly.

  5. Mix the dry ingredients to the wet ingredients and whisk until thoroughly combined.

  6. Fold in the add-in ingredients: chocolate chips and rolled oats.

  7. Using an icecream scoop or something of similar size scoop out the batter and place on lined baking sheet and press down with a fork as these cookies won’t spread.

  8. Bake for 12-18 minutes.

  9. Once baked to your desired texture, remove from the oven and carefully remove the cookies from the baking sheet to a cooling rack and let cool completely.

  10. Enjoy and store the rest in an airtight container at room temperature for 5-7 days.
