This recipe is so easy to make and it is DELICIOUS!! I shared a reel of making this banana bread on my Instagram a couple of weeks ago and asked if anyone wanted the recipe and so many of you commented or messaged me you would like it, so here it is!!
Recipe: Homemade Gluten Free Plant Based Banana Bread
Prep time: 10 minutes
Cook time: 40-45 minutes
Total time: 50-55 minutes
Ingredients
3 very ripe medium bananas (the more brown spots, the sweeter and better they are)
3 cups gluten free rolled oats, made into flour to make 2 cups
1/3 cup organic brown sugar
1 tbsp. oil of choice (I've used coconut oil, avocado oil, and Miyoko's butter before, all worked amazingly)
1/4 cup dairy free chocolate chips
1 1/2 tsp. aluminum free baking powder
1 tsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. sea salt
Optional Toppings: - 1 tbsp. chocolate chips - 1 tbsp. gluten free rolled oats
Method:
Preheat oven to 375 degree Fahrenheit.
Lightly grease a bread tin with coconut oil or avocado oil.
In a large bowl mash the bananas (a potato masher works lovely, or a fork does the job too!).
Add the brown sugar, oil, and vanilla extract to the mashed bananas, mix to combine and set aside.
Make the oat flour by putting the oats in a high speed blender or food processor and run for about 30-60 seconds or until it turns into a fine flour scraping down the sides as needed.
To another large bowl add the oat flour, baking powder, baking soda, and salt and mix to combine.
Add the banana mixture to the dry mixture and stir to combine.
Next, add the chocolate chips and fold in the batter.
Add the mixture to the bread tin and add the toppings if you are going for that vibe.
Bake for 40-45 minutes.
Remove from the oven and let cool for 10 minutes before cutting a slice and enjoying plain or adding some Miyoko's plant based butter on it.
Place the slices in an air tight container on the counter for up to 4 days or freeze slices for in the future.
